The law requires that all food handlers need to be trained according to their food handling work activities. Should an employee achieve a Highfield food safety qualification, which is suitable for the work they do, it will assist food business operators in proving that they have displayed due diligence and are therefore compliant in the eyes of the law.
Level 1 Award in Food Safety Awareness
This half day course aims to prepare learners for employment, or to support a current position within a low-risk role, where there is an element of food handling. This could include bar workers, waiting staff, health care workers, kitchen porters and stock/store room staff.
Level 2 Food Safety
This one day regulated course is aimed at individuals who are, or intend to be, food handlers working in catering. The objective of this qualification is to prepare learners for employment in catering role, or to support a role in the workplace.
Level 3 Supervising Food Safety
This qualification is aimed at those working in the catering industry who are at, or wish to progress to, a higher or supervisory level.
Course contents include ensuring compliance with food safety legislation, the application and monitoring of good hygiene practice, how to implement food safety management procedures and the application and monitoring of good practice regarding contamination, microbiology and temperature control.
Level 4 Food Safety Management
The objective of this qualification is to prepare learners for employment in a food or drink manufacturing environment role, or to support a role in the workplace.
The qualification is intended for those whose job requires them to have some responsibility for food safety.
Learners are likely to have management responsibilities for an operational team.
This qualification covers the subject of food hygiene at a suitable depth to ensure learners have a thorough knowledge of hazards and controls; its focus is on the importance of developing, implementing and monitoring food safety procedures.
Level 2 Award in Food Allergen Awareness and Control in Catering
The qualification is aimed at food handlers and other staff involved in food preparation and service who work within the catering industry.
Level 2 Award in HACCP
The Level 2 Award in HACCP for Catering/Manufacturing is aimed at those working in a food catering/manufacturing environment and other food handlers.
It is recommended that a Level 2 Award in Food Safety is completed prior to attending a HACCP course!
Level 3 Award in HACCP
This qualification is aimed at those responsible for assisting in the development and maintenance of HACCP systems in a catering environment.
It is suitable for learners who are already working in a catering who have knowledge of food safety, hazards and controls and also for those owning or managing smaller food businesses.
